Granola bars






1 + 1/2 cup of rolled oats

1/4 cup of nuts and seeds mixture (I used walnuts, hazelnuts, pumpkin seeds, sesame seeds and chia seeds)

1/4 cup of dessicated coconut*

2 tbsp of ground flaxseeds + 6 tbsp of water

3/4 cup of pitted dates

1/2 cup all natural peanut butter

A pinch of sea salt

1/2 tsp of cinnamon (opcional)

1/4 cup dark chocolate pieces (I used chocolate with 75% of cacao)


* You can replace the dessicated coconut flakes with extra nuts and seeds, like almonds.


In a small bowl combine the ground flaxseeds with water and set that aside for 10 minutes, in order to create a flax gel, resembling an egg texture.

Chop the chocolate into small pieces or you can also use dark chocolate chips.

In a food processor pulse the dates until they form a thick paste. If you're dates are to stiff, try soaking them in warm water beforehand, that will make this so much easier! Transfer date paste to a bowl and set aside.

To the food processor add the nuts and seeds and pulse a few times. Then add the oats, the coconut, the flax "eggs", the date paste, salt and cinnamon. Pulse everything a couple more times. 

Transfer this misture to a large bowl, then add the peanut butter (at room temperature) and the chocolate chips. Mix everything together.

Line a small tray with parchment paper and add the granola mixture to it. Press it down as well as possible, the more compact, the better!

Leave it in the fridge for at least 3 hours or overnight. Cut small bars and it's ready to eat!



You can wrap the bars individually and keep them in the freezer for up to 2 months.
